How to Sharpen the Knife
First, soak the whetstone in water. Place a dump cloth under the whetstone to prevent the stone from slipping.
Place the blade edge diagonally at about 45°on the surface of the whetstone and keep the angle between the knife and the whetstone at about 15°to 20°and start to move the knife.
Pour water on the surface on the stone, relax and move the knife back and forth, keeping the knife against the stone with two fingers. If the water on the whetstone becomes sticky, pour a little water over it.
When it is finished, you will see a burr on the underside of the blade edge. It can be removed by lightly rubbing the back of the blade with a whetstone once or twice.
How to Take Care of the Whetstone
After using, wash off the sharpening residue with water and dry it in the shade. When the centre of a whetstone becomes concave, flatten the surface with sandpaper or a whetstone for correcting.
